Why TarCasso Selected Coratina, Peranzana and Moraiolo for Its First EVOO Launch Edition

Tarcasso EVOO tasting set with Oilala monocultivar EVOOs
TarCasso selected Coratina, Peranzana and Moraiolo for its first EVOO Launch Edition because each monocultivar expresses a different balance of intensity, elegance, structure, polyphenols and pleasure. Together, they form a tasting journey into Mediterranean longevity.

At TarCasso, we believe that longevity begins long before a product reaches the plate.

It begins with soil, harvest timing, cultivar selection, careful production, storage, taste — and the discipline to choose products for real reasons rather than marketing convenience.

For the first TarCasso EVOO Launch Edition, we wanted to begin with something simple, honest and powerful: three monocultivar extra virgin olive oils that express the Mediterranean idea of longevity through both pleasure and evidence.

The result is our first Oilalà monocultivar selection:

Coratina. Peranzana. Moraiolo.

Three olive varieties. Three sensory personalities. One TarCasso philosophy.

Why Monocultivar Matters

A monocultivar extra virgin olive oil is made from one olive variety. That makes it more transparent, more expressive and often more educational than a generic blend.

For TarCasso, this matters because we are not looking for anonymous olive oil. We are looking for oils that can be understood.

A monocultivar allows us to ask better questions:

  • What does this variety taste like?
    How intense is it?
  • How bitter or peppery is it?
  • What is its polyphenol profile?
  • How does it fit into a Mediterranean longevity routine?

This is why our first selection focuses on Coratina, Peranzana and Moraiolo rather than a broad mixed range.

We want people to taste the difference — not just read about it.

Polyphenols: Why the Bitter and Peppery Notes Matter

Extra virgin olive oil is not only a source of fat. At its best, it is a complex food matrix containing minor bioactive compounds, including olive oil polyphenols.

In the European Union, there is an authorised health claim for qualifying olive oil polyphenols: olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. The claim may only be used when the oil contains at least 5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil, and the consumer must be informed that the beneficial effect is obtained with a daily intake of 20 g of olive oil.

This is important for TarCasso because we want our communication to remain evidence-oriented. EVOO is not medicine. It is not a miracle product. But in the right quality, in the right daily context, it can be part of a serious Mediterranean longevity lifestyle.

The large PREDIMED trial, published in the New England Journal of Medicine, found that among persons at high cardiovascular risk, major cardiovascular events were lower in groups assigned to a Mediterranean diet supplemented with extra-virgin olive oil or nuts than in the control diet group.

That is the TarCasso perspective:

Not isolated claims.
Not shortcuts.
A pattern of living.

Taste Is Not Separate From Quality

One of the mistakes people often make with EVOO is to expect it to taste neutral.

High-quality extra virgin olive oil can be fruity, bitter and pungent. Those are not defects. They are positive sensory attributes. Professional tasting frameworks describe fruitiness, bitterness and pungency as central positive attributes of virgin olive oil; pungency is the peppery or biting sensation often felt in the throat.

This is also why TarCasso does not avoid intense oils.

A strong EVOO should have personality.
It should speak.
It should leave a finish.

For us, the “punch” of a high-quality Coratina is not a problem. It is part of the reason we selected it.

Coratina: The TarCasso Lead EVOO

Coratina is the strongest expression in our first selection.

It is bold, intensely fruity and known for structure, bitterness, pungency and stability. In the Oilalà catalogue, Coratina is listed with 847 mg total polyphenols, 336 mg oleacein and 471 mg oleocanthal, making it the highest-polyphenol profile among the three oils selected for this launch.

This is why Coratina becomes the TarCasso Lead EVOO.

  • It is the oil for people who want intensity.
  • It is the oil for those who already understand that bitterness and peppery finish can be signs of quality.
  • It is the oil we would choose for a direct, daily, longevity-oriented EVOO ritual.

For the TarCasso Shop, we selected the Oilalà Organic Coratina Monocultivar 500 ml as our Hero Product. The Oilalà General Catalogue lists the Coratina Organic Line as an extra virgin olive oil monocultivar Coratina, available in 500 ml and 250 ml, with European organic certification indicated for the line.

For TarCasso, the organic aspect matters. It reinforces the product’s fit with our Mediterranean longevity positioning: real food, transparent origin, strong sensory character and respect for the agricultural base.

TarCasso role:
Coratina is the Hero. The daily lead oil. The oil with punch.

Peranzana: Elegance, Aroma and Accessibility

If Coratina is power, Peranzana is elegance.

Peranzana brings a different kind of balance to the TarCasso selection. According to the Oilalà catalogue, Peranzana is listed with 726 mg total polyphenols, 235 mg oleacein and 342 mg oleocanthal. Its profile is described as fruity and aromatic, mild to medium in intensity, with notes of fresh tomato, almond, artichoke and green herbs.

This makes Peranzana an essential part of the Launch Edition.

Not every customer begins with the intensity of Coratina. Some people need an oil that opens the door: still polyphenol-rich, still serious, but more immediately accessible.

Peranzana is that bridge.

It is elegant enough for daily use, aromatic enough for tasting, and structured enough to belong in a longevity-oriented EVOO selection.

TarCasso role:
Peranzana is the Elegant Daily EVOO.
The bridge between pleasure and intensity.
The oil that teaches without overwhelming.

Moraiolo: Structure, Green Notes and Depth

Moraiolo completes the selection. It brings a more herbaceous, structured character. In the Oilalà catalogue, Moraiolo is listed with 740 mg total polyphenols, 240 mg oleacein and 262 mg oleocanthal. Oilalà describes it with herbaceous notes, balanced bitterness and a spicy finish.

For TarCasso, Moraiolo is important because it prevents the selection from becoming simply a Coratina-versus-Peranzana comparison.

Moraiolo adds a third voice: greener, more structured, more contemplative.

It is the oil that encourages slower tasting. The one that pairs naturally with vegetables, legumes, bread, simple soups and the kind of Mediterranean food that does not need decoration.

TarCasso role:
Moraiolo is the Green Structure.
The herbaceous, balanced third pillar.
The oil that completes the tasting arc.

The TarCasso Tasting Arc

The first TarCasso EVOO Launch Edition is not random. It follows a deliberate tasting logic:

  • Coratina: Bold · peppery · high-polyphenol · powerful
  • Peranzana: Fruity · aromatic · elegant · accessible
  • Moraiolo: Herbaceous · structured · balanced · green

Together, they create an experience that is larger than a single bottle.

The customer can compare intensity, aroma, bitterness, pungency and mouthfeel. This is the beginning of EVOO literacy — learning to recognise quality not only by label or price, but by taste, data and direct experience.

That is why the TarCasso Launch Edition is designed as a tasting and discovery set, not simply as a product bundle.

Why We Selected Oilalà

Oilalà is a natural partner for TarCasso because the brand already communicates quality, design, origin and analytical transparency in a way that fits our direction.

Their catalogue emphasises extra virgin olive oil from olives picked at the right level of ripeness and pressed within hours, with cold pressing below 24°C to preserve aromas, polyphenols and nutritional values.

This matters to us because TarCasso is building a product-first longevity ecosystem.

We are not trying to hide the producer behind our own brand. On the contrary: where a producer does excellent work, we want to make that visible.

The TarCasso role is curation.

We select, explain, contextualise and connect the product to a larger Mediterranean longevity philosophy.

Pleasure Is Part of Longevity

At TarCasso, we do not believe in a joyless longevity culture.

A food that is “healthy” but unpleasant will rarely become a lasting habit. A daily ritual must have pleasure built into it.

That is why these oils matter.

Coratina brings punch.
Peranzana brings elegance.
Moraiolo brings depth.

They are not supplements.
They are not shortcuts.
They are foods with character.

To enjoy high-quality EVOO directly, slowly and consciously is not a biohack. It is closer to an old Mediterranean intelligence: choose better ingredients, use them daily, and let pleasure make the habit sustainable.

Our Responsible Claim Standard

TarCasso will not overstate what an olive oil can do.

We will talk about polyphenols, sensory quality, harvest, producer identity and product data. Where a specific health claim is used, it must be legally permitted and substantiated for the relevant product or batch.

That is why our standard is simple:

Product first.
Evidence where available.
No miracle claims.

Our ambition is not to turn olive oil into medicine. It is to bring serious EVOO back into the centre of a Mediterranean longevity routine.

The First TarCasso EVOO Selection

The first TarCasso EVOO selection will therefore be built around three Oilalà monocultivar oils:

Coratina — the Lead EVOO
Peranzana — the Elegant Daily EVOO
Moraiolo — the Green Structural EVOO

And our Hero Product:

Oilalà Organic Coratina Monocultivar 500 ml
selected by TarCasso as its lead oil for intensity, organic quality and high-polyphenol character.

This is the beginning of the TarCasso EVOO journey.

Not a generic marketplace.
Not a wellness slogan.
A curated Mediterranean longevity selection, rooted in real products, real taste and responsible evidence.
