Why TarCasso Selected It

A reference point for understanding Coratina.

TarCasso selected Coratina as part of its first comparative EVOO journey because it offers a distinctive counterpoint to more delicate and balanced cultivars.

Oilalà's Organic Coratina brings together clear cultivar identity, organic production, an intense sensory profile and an unusually visible producer approach to analytical data.

01 Distinct Cultivar

100% Coratina creates a clear basis for learning cultivar character.

02 Strong Sensory Identity

An intentionally intense style rather than a neutral all-purpose oil.

03 Organic Production

Organic positioning adds another documented dimension to the selection.

04 Evidence Potential

Oilalà publicly provides analytical information about its EVOOs.

A powerful reference point for understanding Coratina. TarCasso selected this organic monocultivar as a strong expression for consumers who want to experience the distinctive intensity, bitterness and pungency associated with a characterful Coratina EVOO.

Cultivar Intelligence

Understanding Coratina.

The cultivar is part of the identity of a monocultivar EVOO in much the same way that a grape variety helps explain the personality of a wine.

Coratina provides a useful lesson in sensory diversity: pronounced bitterness and pungency should not automatically be interpreted as flaws. In a well-made EVOO, they can be part of the intended cultivar expression.

This is why TarCasso uses Coratina as one of the reference points in its comparative EVOO tasting concept.

Producer Intelligence

Oilalà.

TarCasso's producer analysis looks beyond branding. For this EVOO, the relevant questions include olive origin, cultivar identity, harvest timing, processing and the documentation Oilalà makes available to customers.

Oilalà publicly publishes analytical information for a range of its EVOOs, including acidity, peroxide and phenolic information.

Product Model Monocultivar EVOO

The Coratina identity remains explicit rather than disappearing inside a blend.

Harvest Context November–December

Harvest timing is publicly specified for the product.

Processing Mill within four hours

Oilalà states that the olives are brought to the mill within four hours of picking.

Transparency Public laboratory data

Published analytical reports provide an additional evidence layer — subject to harvest and batch relevance.

Laboratory & Evidence

Evidence needs a date, a harvest and ideally a batch.

TarCasso does not treat an impressive laboratory number as timeless. Analytical values can change between harvests and batches, so provenance of the data matters as much as the number itself.

Oilalà's current product information identifies the oil as harvest 2025/2026 and currently cites a polyphenol value of 371 mg/kg.

Why TarCasso does not simply publish 854 mg/kg as the current value

The publicly linked laboratory report is dated December 2024, while the current product page refers to the 2025/2026 harvest and a different polyphenol value. TarCasso therefore treats the 2024 report as historical evidence until batch-relevant documentation is confirmed.

Taste Intelligence

Don't hide it. Taste it.

An intense monocultivar is most useful when its character can actually be experienced.

For comparative tasting, try Coratina first on its own and then beside a more delicate cultivar. Pay attention to fruitiness on the nose, bitterness on the palate and pungency as the oil finishes.

The objective is not to decide which cultivar is universally “best”. It is to understand how different they can be.

01 Smell

Warm a small amount gently in the tasting glass and focus first on the aromatic impression.

02 Taste

Take a small sip and allow the oil to spread through the mouth.

03 Notice Bitterness

Bitterness is part of the sensory vocabulary of EVOO and should be assessed rather than automatically avoided.

04 Notice Pungency

Observe the peppery sensation and persistence in the finish.

From Intelligence to Choice

Understand it. Compare it. Then decide.

EVOO Intelligence is not designed to tell everyone which oil they must prefer. It provides the context needed to make better-informed choices.

Oilalà Organic Coratina represents the intense end of the first TarCasso comparative tasting journey. Peranzana and Moraiolo provide different reference points.
