EVOO Intelligence is the research, provenance and evidence layer behind TarCasso curation — designed to help people understand why one oil may be very different from another.
“Extra virgin” is the starting point — not the whole story.
The words extra virgin describe a regulated quality category. They do not by themselves explain the producer, cultivar, harvest strategy, sensory personality, freshness or the broader production decisions behind a bottle.
Two oils can therefore belong to the same regulatory category while offering very different stories, sensory experiences and levels of transparency.

EVOO Intelligence is designed as a repeatable framework. The same questions can be applied to a celebrated premium brand, a specialist monocultivar producer or a small local family mill.

Who grows the olives? Who mills them? Who bottles the oil? We want to understand the people, business model and production relationships behind the label.

Olive varieties can express very different sensory characters. TarCasso therefore treats cultivar identity as useful product information rather than a technical detail.
Harvest Intelligence
Harvest year, timing and fruit maturity provide important context for understanding freshness, style and the decisions a producer makes before milling begins.

Harvest logistics, milling, extraction, filtration, storage and bottling all form part of the journey between olive and finished EVOO.

The TarCasso Cultivar Library is designed to expand over time as new producers and oils enter the Intelligence framework. Future profiles may include regional cultivars from Friuli, Trieste and the wider Mediterranean.

Good information should be comparable without pretending that complex products can be reduced to one score.
TarCasso uses a standard Intelligence Card for selected EVOOs. It presents the most useful available information in the same structure from one oil to another. The objective is to present the most useful available information in the same structure from one oil to another.

Numbers can inform quality. They should not replace it.
Laboratory data is valuable when interpreted in context. TarCasso uses analytical information as one layer of understanding rather than presenting a single number as proof that one oil is universally “better” than another.
No single laboratory parameter defines a great EVOO. Chemical analysis, sensory assessment, freshness, provenance and production context belong together.
Free Acidity
A regulated quality parameter. Under EU rules, extra virgin olive oil must remain within the legal limit for its category. Lower acidity alone, however, is not a complete quality ranking.
Peroxide Value
One of the analytical indicators used in assessing oxidation and conformity. It becomes more meaningful when considered together with other chemical and storage information.
Phenolic Information
Where reliable batch-specific information is available, TarCasso may use phenolic data to provide additional context on the oil rather than turning it into a simplistic marketing score.
Sensory Assessment
Fruitiness, bitterness and pungency are recognised positive sensory attributes in virgin olive oil evaluation. Sensory quality therefore belongs alongside laboratory analysis.
Harvest & Storage Context
Harvest identity, exposure to light, oxygen, temperature and time can all help explain the condition and freshness context of an olive oil.
Food, not medicine. Evidence, not miracles.
Extra virgin olive oil is deeply connected with the Mediterranean dietary tradition that inspires TarCasso. We believe that connection deserves serious communication rather than exaggerated health promises.
TarCasso therefore distinguishes between regulated claims, broader scientific research and our own Mediterranean lifestyle perspective.
The European Union permits a specific health claim for qualifying olive oil polyphenols concerning protection of blood lipids from oxidative stress. The claim is subject to defined compositional and intake conditions and should not be generalized to every EVOO.
Mediterranean dietary pattern
EVOO is one of the characteristic foods associated with Mediterranean eating patterns and provides the cultural and nutritional anchor for TarCasso's longevity approach.
Qualifying polyphenol claims
Where a specific oil meets the applicable conditions and reliable data is available, authorised information can be communicated precisely rather than generically.
A growing scientific field
Research continues into individual olive-oil compounds, dietary patterns and healthy ageing. Emerging evidence should remain clearly distinguished from established or authorised claims.
Longevity is a pattern of living.
TarCasso does not present EVOO as a longevity medicine. We see it as an exceptional food within a broader pattern involving real food, movement, place, culture and long-term habits.
