Who grows the olives? Who mills them? Is the oil made by a family farm, an integrated estate or a specialist producer working with selected growers?
Different producer models can create exceptional EVOO. Understanding them is part of understanding the oil.
Cultivar Intelligence
Coratina is not Peranzana. Moraiolo is not Frantoio.
Olive cultivars can differ significantly in taste, structure, intensity and composition. TarCasso explores these differences rather than treating EVOO as one interchangeable product.
